Craving something cold and sweet? Frozen Yogurt-Granola Bites take just few minutes to mix together and are a hit with all ages. Freeze until solid, and then store in the freezer to snack on. Each yogurt bite is about 40 calories, so enjoy two for less than 100 calories while getting 5 g of protein.
INGREDIENTS
1 cup plain low-fat Greek yogurt
2½ Tbsp. honey or maple syrup
1 tsp. lemon juice (optional)
⅓ cup fresh or frozen blueberries or chopped mixed berries
6 Tbsp. low-fat higher-protein granola or whole-grain clusters (such as Nature Valley Oats ‘n’ Honey Protein Granola)
INSTRUCTIONS
- Place yogurt in a small mixing bowl. Add honey and lemon juice, stirring to combine.
- Place paper liners in a 12-count mini-muffin pan. Divide yogurt mixture evenly among 12 cups (approximately 1½ Tbsp. in each). Divide berries evenly among yogurt cups, pressing down into yogurt mixture slightly. Sprinkle 1½ tsp. granola over each yogurt cup. Freeze yogurt cups in muffin pan. Once frozen, store in the freezer in an airtight container.
Serves 6. Serving size: 2 yogurt cups
